Well-known classics are prepared with modern methods to become a new food trend and grandmother’s recipes experience a new hype. Will “just like Grandma‘s” be your new cooking goal?
The new old dishes
The restaurant “Tisk” in Berlin, the restaurant “Fränk’ness” by German star chef Alexander Herrmann in Nuremberg and “Mike’s Heimatküche” near Postdam are popular examples of this trend. More and more restaurants are dedicating themselves to the renaissance of local cuisine or focusing on recipes from an earlier generation. The aim: tried and tested recipes from mom and dad, as well as grandma and grandpa, are adapted with contemporary tricks and new preparation methods and are therefore modern interpretations.
In these new locations with contemporary designs, a new love for “home” can and should easily arise. Whether one sees it as a counter-movement to current globalisation (like futurologist Michael Horx), the nostalgic longing in the origin (according to Food Scout Richard Kägi) or the retro dishes are simply proven soul food – the culinary return is stronger than ever.
Grandma’s cake recipes
Since “just like Grandma’s” is the new culinary goal, traditional cakes are once again coming into focus. If you haven’t already secured them, you should ask your grandparents about their recipes as soon as possible. “Streuselkuchen” à la Granny, vanilla pudding cake or “Gugelhupf” with red wine, or egg liqueur – these are the true new old classics.
